Smoked fish


Here is a photo of the smoked fish. It was seasoned with sea salt and a little brown sugar before smoking. Tastes delicious.

G caught another 6 fish yesterday (5 grey mullet and 1 kahawai) when he took the net in and decided to buy our own fish smoker today. We'll be trying it out soon and I'll post the results.

Hi Joanna
This smoked fish was actually given to us. I understand the smoker was a converted clothes dryer and the fish hung on skewers inside. There would be some sort of heat source at the bottom - the smoker we bought can be put on top of a gas BBQ, or you can use small pans of meths. Then to create the smoke there is a tray of sawdust - most commonly from the native Manuka tree - which gives a nice flavour to the fish. I think in the UK they would use oak or ash. Will be able to post more when we have tried it out ourselves hopefully today.

Bridget I have posted up a recipe for Kumara Pie. You can use it in combination with smoked fish as well I've put the extra part about the smoked fish combination at the bottom. I'll find my Grandmothers book which has some wonderful recipes in it as well
